Ingredients

    Dry
    1.75 C All-purpose Flour
    .5 C Brown Sugar
    .25 C Granulated Sugar
    2.5 tsp Baking Powder
    .25 tsp Baking Soda
    1 tsp Cinnamon
    .25 tsp All Spice
    dash Nutmeg
    .5 tsp Salt
    1 Large Apple, chopped (~2 cups)

    Wet:
    1 Large Egg
    1 tsp Vanilla Extract
    6oz Vanilla Yogurt
    6 tbsp Melted Butter
    .5 C Unsweetened Applesauce

    Topping:
    ~3 tsp Brown Sugar
    .5 C Chopped Walnuts

Directions

Whisk together dry ingredients, add apple. Separately, mix together wet ingredients. Fold dry ingredients into wet until just moistened. Don't over-mix.

Spoon into greased or lined muffin/cupcake tins. Separately, mix together the chopped walnuts and brown sugar. Spoon mixture on top of muffins.

Bake at 350 degrees for 20-25 minutes.

Serving Size: Makes 8 Large muffins

(or ~20 standard size)
