    1 lb lean ground beef
    1 (15 oz) can black beans
    1 (6 oz) can tomato paste
    1/2 cup Mexican cheese blend
    1 packet burrito seasoning
    8 low carb/high fiber tortillas (I use 50 calorie LaTortilla wraps for this recipe)
    1 can chopped olives


In a large skillet, over med-high heat, brown ground beef and drain fat.

Add burrito seasoning and turn heat to low.

While meat is browning, pour beans in a bowl and lightly mash the beans together with the tomato paste until some of the beans are smashed, and the tomato paste is well combined with the beans-(I use a fork to do this).

Add the bean mixture, drained olives, and shredded cheese to the skillet with the ground meat, and mix well until the cheese is melted, and everything is well combined, and remove from the heat.

Place 1/4-1/2 cup of burrito filling in each tortilla and roll up burrito style.

If eating immediately, place plate in microwave for 1 minute or warm oven for 5 minutes.
(If eating later~ cover with saran wrap and refrigerate until ready to eat! Just before eating, microwave for 1-2 minutes or bake in 350 oven for 5-10 minutes)

Serving Size: Makes 8 Burritos, 1 Burrito = 1 Serving
