Homemade Turkey Stock, 12 cup or 3 quarts
Wild Blend Brown Rice-2.5 C, uncooked
Sweet potato, medium to large, cubed into bite sized pieces
Yams, medium to large, cubed into bite size pieces
    Turkey (dark meat), chopped
Cranberries, dried, sweetened 2 cup chopped

To make homemade stock: After de-boning the turkey carcass, put carcass in pot and cover with water. Simmer for 4 hours with 4 chopped carrots, 4 chopped celery ribs, whole chopped onion, and 2 or 3 bay leaves. Drain liquid from the rest of the ingredients and allow to cool in fridge. Skim fat from top. If you don't have the carcass or don't have the time, then just purchase chicken/turkey stock from store.
Add into stock the remaining ingredients and cook about one hour.
I have also added smoked salt to give a bit of smokey flavor.

Serving Size: makes 20 one cup servings
