Ingredients

    6 cups prepared peaches
    1 1/4 Cup Chopped red onion
    3 finely chopped hot peppers
    1 red sweet pepper
    1/2 Cup fresh cilantro
    1/2 Cup white vinegar
    2 tbsn Maple syrup (or honey)
    1 clove garlic finely chopped
    1 1/2 tsn grounded cumin

Directions

Blanch, peel, pit and chop peaches; measure 6 cups. Combine alll ingredients in a large saucepan. Bring to a boil, stirring constantly. Boil gently for 5 min. Remove from heat. Pour into sterilized jars.

Makes 3 jars of 250 ml and 1 jar of 100 ml. Portions = 1tbsn.
