    8 8-inch flour tortillas
    1 cup cubed roasted white chicken meat
    1 large, ripe tomato, chopped
    1 raw scallion, chopped
    1/2 cup shredded romaine lettuce
    1/4 cup shredded cheese
    Ranch dressing


Place flour tortillas out and open. It will be important to place the ingredients in the center on each tortilla. Aim for the top and bottom portion to have 1.5-2 inches of space between the food and the top of the tortilla. For each side, leave as much space as possible in order to wrap the tortilla siccessfully around its ingredients.
Take the shredded cheddar cheese and sprinkle evenly in the center part of each tortilla. The cheese will enhance the flavor and not overdo it. Next, do the same with the cubed chicken meat. Then the chopped scallion. Add the chopped tomato. Add the lettuce. Finally, pour one serving of ranch dressing on each tortilla center.
Fold the bottom part of the tortilla up to the ingredients. Make sure the ingredients are being snuggled in the pocket it creates. Next, fold each of the sides carefully around the ingredients -- you want the wrap to contain the food, but it does not have to be as tight as a burrito. Leave the top portion open, but it is still important the the inner ingredients stay inside the wrap for this final step.
Now take each wrap and heat each side QUICKLY on a hot skillet on the stove. It is important that you crisp but not burn the tortilla. If you do not have a non-stick skillet, use a light cooking spray on the pan first to keep it from sticking.
