    2 tsp olive oil, divided
    1 cup frozen pearl onions
    16oz trimmed beef round steak, cut into bite size pcs
    1 cup red wine
    15 oz canned kidney beans, rinsed & drained
    15 oz canned black beans, rinsed & drained
    3 lg carrots, cut into 1" pieces
    3 lg stalks celery, cut into 1" piec es
    2 cups fat-free beef broth
    1 tsp chili powder
    1 tsp ground thyme
    1/2 tsp crushed red pepper flakes
    1/2 tsp black pepper
    1/2 tsp table salt
    1 bay leaf
    1 Jalapeno chopped (if desired)


Preheat oven to 325.
Heast oil over medium high heat in heavy bottom dutch oven. Saute onions & garlic for 5-7 minutes, or until browned. Remove from pan. Cook beef in pan without crowding for 6-8 minutes until browned, set aside meat. Add wine to pan and bring to a boil, scraping any browned bits off bottom of pan. Stir in remaining ingredients, including meat, and bring to a low boil. Cover and bake stew in preheated oven for 1.5 hours, or until beef is fork tender. Remove bay leaf before serving.

Serve with freshly made whole wheat dinner rolls.
