Ingredients

    2 medium butternut squash (4 cups mashed)
    1 tbsp groung cinnamon
    1/8 cup whole milk
    1/4 tsp Trocomare

Directions

Slice squash in half long ways. Scoop out seeds and stringy stuff (grapefruit spoon works well). Pour enough hot water in a baking sheet to reach 1/4 inch. Place squash cut side down into the water. Bake at 350 about 1 hour and 20 min. Let cool and remove skin. Add cinnamon, milk, and Trocomare. Mash or puree with stick blender. You can heat and eat now, or you could put in glass baking dish and bake 30-60 min at 350 to make it more solid. Enjoy!
P.S. Trocomare is from the health food store and adds lots of flavor. 1/4 tsp has zero calories and 360 mg sodium.

    this was pretty good, I may try some different seasoning and see what I can come up with. - 10/20/11
