2 large whole eggs + 1 cup egg whites (=4 eggs)
1/4 cup (12 tsp) splenda
1 quart (4 cups) Silk Light Vanilla flavored soy milk
1 teaspoon vanilla extract

1. In large saucepan, beat together eggs, eggbeaters & splenda. Stir in 2 cups of the soy milk. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160 ° F (70 ° C).
Remove pan from heat.
2. Stir remaining 2 cups milk and vanilla extract into the mixture. Cover and refrigerate until thoroughly chilled; several hours or overnight. Just before serving, pour the egg nog into a bowl or pitcher.
Makes 8 (4 fl oz) servings.
