Introduction

This was a basic recipe I found on the internet, then tweaked to my liking. This was a basic recipe I found on the internet, then tweaked to my liking.
Number of Servings: 15

Ingredients

    3 mashed bananas
    1/2 cup applesauce
    2 cups flour
    1/2 cup sugar
    1/4 tsp salt
    1 Tbsp baking soda
    1 tsp cinnamon
    1 tsp vanilla extract
    1/2 cup walnuts
    1/4 to 1/2 cup milk-like product (optional)
    1 Tbsp brown sugar

Directions

Preheat oven to 350 degrees. Grease your pan.
Mash bananas in a large bowl. Mix in the applesauce.
Stir in flour, sugar, salt, baking soda, cinnamon, and vanilla.
Mix in walnuts.
If the batter is too thick for you, add some soy/almond/rice/hemp milk.
Pour/scoop into pan. Top with brown sugar and cinnamon mix.
Bake for one hour for bread or 35 minutes for muffins.

Serving Size: 12 to 15 muffins or one loaf

    Incredible!
    The bread was very moist and tasty! We really enjoyed it and will make it again! We used cinnamon appleasauce. If we would have left it in the oven for an hour, as the recipe advises, it would have burned -- so I would say to adjust the cooking time to 45 to 50 minutes. - 11/3/12
