    egg white, fresh, 6 large
    Linguine, 4 serving
    Shredded Mild Cheddar, 1 cup (set aside 1/4 cup)
    Bell Pepper - Red - 1/2 1 large
    Zucchini, 1 cup, sliced
    Garlic, 2 cloves
    Onion 1/4 cup
    Extra Virgin Olive Oil, 2 tbsp
    Basil, 4 tbsp


cook pasta as directed
Saute veggies and garlic in EVO, and set aside
combine eggs, salt & pepper and cheese, basil and any other herbs you prefer. cool then add to egg mixture
in an oven safe pan add pasta, poor egg mixture over pasta and combine well. cook over medium heat for about 6 minutes or until egg is mostly set.
sprinkle 1/4cup cheese on top then move under broiler until lightly browned on top and egg is completely set

Serving Size: Makes on 12 inch pie
