Introduction

Easy to half this recipe. Pancakes freeze really well. Just defrost in microwave and pop in toaster for quick breakfast or snack. Easy to half this recipe. Pancakes freeze really well. Just defrost in microwave and pop in toaster for quick breakfast or snack.
Number of Servings: 14

Ingredients

    2.5 cups whole wheat flour
    0.5 cups soy flour (can use whole wheat flour, quinoa flour, rice flour or bean flour as well)
    2 tbsp baking powder
    2 tbsp brown sugar
    1/3 cup ground flax
    1/5 tsp salt
    2.5 cups milk
    2 large eggs

Directions

Mix all dry ingredients. Add Milk and still till still lumpy. Add eggs one at a time and stir in between. Cook in hot griddle with a little oil or butter till bubbles form on top. Flip and cook till brown.


Serving Size: Makes 14 4" pancakes
