    1 lb. ground beef
    1 can Corn, drained
    1 can Diced Tomatoes, rinsed
    1 can Black Beans, rinsed
    1 c. Salsa
    1 1/2 c. Shredded Cheese
    3 Tbs. Sour Cream
    Taco Seasoning
    8 Whole Wheat Tortillas


Brown beef and add taco seasoning.
Mix together beef, corn, beans, tomatoes, salsa, sour cream and 1 cup of cheese.
Lay 2 tortillas along bottom of baking dish. (I tear them in half so that a flat edge is against each side of the dish.) Spoon 1/3 of filling mix over top. Repeat layers, alternating tortillas and filling, finishing with a layer of filling.
Bake at 350 for 25-30 minutes.
Add remaining 1/2 cup cheese to top and bake 5-10 minutes or until cheese is melted.
