Number of Servings: 6


    1 12 oz package of extra firm tofu
    1/4 cup hoisin sauce
    3 TBSP soy sauce light
    3 tsp. chili paste
    3 TBSP brown sugar
    2TBSP oil (for pan)
    2 garlic cloves
    5 cups fresh green beans, both tips cut off, and cut into 2 inch pieces
    1 cup snow peas, trimmed and cut in half
    1/2 Large onion, chopped
    1 can water chestnuts


Drain the tofu. Place the tofu block in a bowl under 3 or 4 folded paper towels. Cover tofu block with 3 or 4 more paper towels and place unopened can of water chestnuts on top of napkins. Allow tofu to sit for 15-20 minutes.
While waiting, combine hoisin sauce, soy sauce, chili paste, brown sugar, and 3 TBSP water into a bowl. This will be the stir fry sauce. Set aside.
Remove tofu from napkins and cut into small cubes. Heat 2 TBSP oil in a skillet and saute garlic for one minute.
Add tofu and 4 TBSP of the sauce made previously. Stir fry tofu for at least 3 minutes.
Remove tofu from pan and set aside.
Saute green beans, snow peas, water chestnuts and onion for at least 5 minutes.
Add tofu and remaining sauce and cook until veggies are cooked to preferred tenderness. Serve with brown rice or noodles.
