tea loaf tea loaf

Ingredients

    2x earl grey tea bags
    250g dried mixed fruit
    100g demerara or soft brown sugar
    250g plain white flour
    1 tsp bicarb soda
    1tsp baking powder
    1/2 tsp nutmeg ground
    1/2 tsp cinamon
    1 large egg

Directions

make up tea with 8 fl oz water leave to steep for as long as desired strengh, add fruit and sugar to brewed tea removing t bags first and leave covered for a few hours or overnight, add flour bicarb baking powder cinamon and nutmeg and mix then add beaten egg put into a lined loaf tin and bake at 170 c for 1 hour test with skewer if it comes out clean cake is done if not give a little longer allow to cool serve sliced with butter or low fat spread enjoy
