Introduction
Easy little slow cooker sandwiches that remind me of a certain popular french restaurant chain. Easy little slow cooker sandwiches that remind me of a certain popular french restaurant chain.Number of Servings: 12
Ingredients

1-2 lbs of chicken thighs or breast (the thighs pull apart easier, but the breast is lower in fat!)
1/2 - 1 cup of your favorite Casear Dressing (there are some REALLY good fat free varieties out there!) I like Newman's Own Lighten Up Casear
1/2 cup shredded Parmesan Cheese
1/4 cup fresh chopped parsley (or 2 teaspoons dried)
1/2 teaspoon ground pepper
2 cups shredded romaine
12 slider buns or 4-6 regular sized buns
1 stalk of celery
Directions

1/2 - 1 cup of your favorite Casear Dressing (there are some REALLY good fat free varieties out there!) I like Newman's Own Lighten Up Casear
1/2 cup shredded Parmesan Cheese
1/4 cup fresh chopped parsley (or 2 teaspoons dried)
1/2 teaspoon ground pepper
2 cups shredded romaine
12 slider buns or 4-6 regular sized buns
1 stalk of celery
1. Place celery stalks along the bottom of slow cooker, place chicken on top. Add 1-2 cups water and any seasonings of your choice (I stuck with the basics, a little salt, pepper, parsley, garlic and onion.)
2. Cook chicken for 4-6 hours on low.
3. Remove chicken from cooker using slotted spoon and drain the water- toss the celery. Place chicken on cutting board and pull into shreds, discard any fat.
4. Place chicken back in cooker and pour in dressing, parm, parsley, and pepper over the top. Use more dressing if needed. Stir until mixed evenly. Cover and cook on high heat for 30 minutes or until mixture is hot.
5. Spoon 1/4 cup mixture onto each slider bun if you are making sliders- more if you are using larger buns. Top with any extra parm and lettuce to serve.
