Saute veggies in oil; add turkey and cooked quinoa - saute' until partially cooked. Stir in tomato paste; add water (1/4 cup or so) if needed.
Stuff peppers. Bake at 350 degrees until peppers are soft. Top with 1 Tbsp. feta cheese; bake or broil until cheese is browned. Serve hot.
