    4 small zucchini, sliced in half, then quartered lengthwise (8 sticks per zucchini)
    1/2 seasoned breadcrumbs
    1/4 C. panko
    dash salt and pepper
    2 eggs, slightly beaten


Combine breadcrumbs, panko, salt and pepper in shallow dish. Dip quartered zucchini in beaten eggs, dredge in breadcrumb mixture. Place on baking pan coated with cooking spray. Bake at 400F for 25 minutes or until golden brown.

Serving Size: Makes 4 servings of 8 sticks each
