Ingredients

    1 cup sifted all purpose flour
    3 tablespoons sugar
    2.5 teaspoons baking powder
    1/2 teaspoon salt
    1 cup whole bran
    1 well beaten egg
    1 cup mashed ripe banana
    1/4 cup milk
    2 tablespoons salad oil or melted shortening

Directions

Sift together flour, sugar, baking powder, and salt. Stir in bran. Mix remaining ingredients; add all at once to flour mixture, stirring just to moisten. Fill greased muffin pans 2/3 full. Bake at 400 degrees for 20 to 25 minutes.

Serving Size: Makes 12 muffins
