Ingredients

    2 cups butternut squash cubed
    1 small red peper sliced
    1 onion chopped
    3 garlic cloves
    vegetable stock cune

Directions

chop all ingredients place in roasting tin with garlic cloves add oil and mix so everything is coated and bake on 180c for 30 mins, once cooked add to a blender with approx 10fl oz of vegetable stock and blend put through a sieve and add salt and pepper to taste
