    Onions, raw, 1 large, chopped
    Peppers, sweet, red, raw, sliced, .5 cup, sliced
    Chicken Breast, no skin, 8 ounces, chopped
    Sweet potato, cooked, baked in skin, without salt, 1 medium (2" dia, 5" long, raw) mashed
    Salsa, .5 cup
    Goat Cheese, Soft, 3 oz
    cumin, 1 tsp
    chili powder, 1/2 tsp
    Corn Tortillas, 4 tortilla, medium (approx 3" dia)
    avocado, 1/2 mashed (optional)


Saute onion and peppers until soft. Push to side of skillet and brown chopped chicken breast. Cook until pink is gone from meat. Meanwhile cook a sweet potato in microwave. Peal the potato and mash with a tablespoon of salsa. Add rest of salsa to chicken mixture. Layer sweet potato, chicken mixture cheese and potatoes in greased pie pan. Bake in oven for 15 minutes until heated through. Serve with quartered tortillas. Top with mashed avocado if desired.
