    5 lb bag yellow potatoes, cooked, peeled and diced
    3/4 c. light mayonnaise
    1/4 c. regular mayonnaise
    6 large eggs, boiled, peeled and diced
    1 T. agave nectar
    3 T. truvia
    1 T. white vinegar
    2 large apples, peeled and diced
    salt and pepper to taste


Place cooked, peeled and diced potatoes in a large bowl. In small bowl mix vinegar, agave, truvia and 1/4 c. mayo. Add mixture to potatoes. Add apples, eggs and remaining mayonnaise. Salt and pepper to taste. Mix well.

Serving Size: Makes 20 1/2 cup servings
