Ingredients

    1 - Green Pepper (diced)
    2 - Onions (chopped)
    18 - Eggs
    2 1/4 cups - Hash Browns
    1 can - Mushrooms (stems & pieces)
    1 cups - Fiesta Shredded Cheese
    1/8 cup - Shredded Cheddar Cheese
    2/3 cup - Shredded Mozzarella
    24 slices - Turkey Bacon (cut in pieces)
    2 full links - Turkey Smoked Sausage
    1tsp - Salt (or to flavor)
    2tsp - Black Pepper (or to flavor)
    1tsp - Garlic Salt (or to flavor)
    1tsp - Onion Powder/Salt (or to flavor)

Directions

Prep the Green Peppers, Onions, Bacon & Turkey Sausage. Crack the eggs into a large mixing bowl and season to flavor & whip/beat the eggs until mixed. Once you have done this add the Potaotes, Green Peppers, Onions, Mushrooms, Bacon & Turkey Sausage then mix everything together.
Take a large glass pan and spray with either Olive Oil or Butter Flavored spray then pour the mixture into the pan & top with shredded cheese. Put the glass pan into the oven and bake at 425 degrees for approximately 45 minutes or until all liquid is absorbed. Then remove from oven and cut into 4"x4" squares (9"x13" pan) & serve immediately.
