    *Chicken stock, Kitchen Basics (unsalted), 4 cup (can use vegetable stock to make vegetarian dish)
    *Lentils, dry 1 cup
    Carrots, raw, 2 medium diced
    Onions, raw, 1 small diced
    Garlic, 3 tsp minced
    Olive Oil, 3 tbsp
    *Potato, raw, 1 medium diced
    Spinach, frozen, .5 package
    Pepper, black, 1 tbsp
    *Italian Seasoning: Good Seasons, .5 tsp
    Salt, to taste


add oil carrots onions to soup pot saute for 3 - 5min till onions translucent. add potatoes and sautee for an additionl minute or so. add chicken stock lentils garlic pepper and salt to taste. bring to boil, let simmer 30-45 minutes until lentils plump and soft. add frozen spinach and remove from heat. stir and let sit for approx. 15 minutes. season to taste.

makes approximately 6 servings. I love to serve with cornbread.
