    1 egg
    1/4 c. canola oil
    1/2 c. Light Silk Soy Vanilla or Milk
    3/4 c. whole wheat flour
    3/4 c. white flour
    1/2 c. sugar
    2 tsp. baking powder
    1/2 tsp. salt
    1/2 c. pecans
    1 c. blueberries, frozen or fresh


Preheat oven to 400 degrees. Beat egg; stir in oil and milk. Mix in remaining ingredients just until flour is moistened. batter shoul be lumpy. fill muffin cups 2/3 full. Bake at 400 degrees for 20 - 25 mins. or until golden brown. Immediately remove from pan. (Grease bottoms of muffin tins if not using paper muffin cups.)
