Introduction
This is my basic recipe for chicken and dumplings. Sorry if its a bit vague, I kind of cook by feel and have estimated some of the veggie ingredients (except for the peas). Ingredients

3 large chicken breasts, no skin or bone
1 cup chopped carrots
1 cup chopped onion
1 cup chopped celery
1 container (about 3.5 cups) vegetable broth
1 bag frozen peas (small bag)
salt & pepper to taste
3 to 4 tablespoons cornstarch
for dumplings
1.5 cups low fat bisquick
.5 cup milk
Directions
cook chicken breasts, vegetable broth and onions in crock pot for about 6 hours (or boil together until chicken can be shredded)
once chicken is cooked, transfer broth and onions to large pot
remove any excess fat from chicken and shred
add shredded chicken carrots, onions and celery to pot and
cook on med. high on stove top til carrots are almost tender, add frozen peas
remove several ladle fulls of liquid from pot and add to bow with 3 to 4 tablespoons of flour or cornstarch, whisking all the time to make a thick but smooth gravy like mixture, add back to pot to thicken
mix dumplings together (just follow recipe for biscuits on side of HeartSmart box)
drop biscuit mix by spoonfuls on top of chicken mixture and cover until dumplings are puffed and firm
Serving Size: 6 to 8 servings
