    3 ripe bananas
    1/4 c olive oil
    1/3 c brown sugar
    2 tsp vanilla
    1 egg

    1 c sorghum flour
    1/2 c cornstarch
    1 tsp baking soda
    2 tsp baking powder
    1/4 tsp salt
    1 1/2 tsp xanthan gum
    1 tsp cinnamon
    1/8 c fresh milled flax seed

Directions

blend wet
whisk dry
combine in mixer
beat 1 min
bake 350 for about 20 minutes for large muffins
