    1 medium zucchini, grated
    1 small carrot, grated
    1 medium capsicum, finely chopped
    125g spanish chorizo, finely chopped and fried
    3/4 cup grated low fat cheddar cheese
    1/2 cup self raising flour
    1/4 cup rice bran/vegetable oil
    4 eggs, lightly beaten
    6 cherry tomatoes, halved


Preheat oven to 180 C. Grease and line slice pan. Combine zucchini, carrot, capsicum, chorizo, cheese and flour in a bowl. Whisk together oil and eggs. add to vegetable mixture. Pour into pan and smooth surface. Gently press tomatoes, evenly spaced into top of slice. Bake for 30 minutes. Cool in pan and cut into pieces. Serve with salad.
