Introduction

This salad has a little bit of everything and is very versatile...and filling! This salad has a little bit of everything and is very versatile...and filling!
Number of Servings: 2

Ingredients

    2 cups Mixed romaine lettuce
    1 carrot, shredded or sliced (I use a peeler for the slices)
    1 cup red bell pepper, sliced
    2 medium radishes, sliced
    1/2 an avocado, cut into squares or chunks
    1/2 cup sprouts
    1/4 cup (or less) raw sunflower seeds

    1 tbsp Goddess Dressing
    1 tbsp Balsamic vinegar

Directions

Mix all vegetables and seeds together in a large bowl. This should come to two servings. Serve and add goddess dressing and vinegar. I use the vinegar to enhance the flavor because sometimes the amount of goddess dressing isn't enough.

I came up with this salad when I was raw foodist in an effort to give myself a good amount of variety in vitamins and nutrients every day. Some other great ingredients to add or substitute are zucchini, raw asparagus (the wonder vegetable), broccoli, cucumber, tomatoes, corn, etc. Go wild--it's low in calories and high in nutrients!!!
