Introduction

I modified this from another member's recipe. I needed to use up some left over roasted vegies so I added them in. I did not have any parmesan cheese so I just used what was in my fridge. Number of Servings: 8

Ingredients

    3 whole eggs
    3/4 c. Half and Half
    3/4 c. Skim Milk
    1/2 c. Chopped Parsley
    1 1/4 c. Smoked Salmon
    1/2 c. Colby Jack Cheese, shredded
    1/2c. Part Skim Mozzarella Cheese, grated
    1 1/2 c. Oven Roasted Vegetables
    Salt & Pepper to taste

Directions

Pre heat oven to 325 degrees. Spray 9" round pie or cake pan with olive oil cooking spray. Beat eggs. Add half and half and milk, beat. Add all remaining ingredients and stir. Pour into prepared pan and bake 45 minutes or until center is firm and knife comes clean.

Serving Size: makes 8 - 2" wedges
