    Boneless skinless chicken breast halves or chicken tenders
    1 med. onion, chopped
    1 garlic clove, minced
    1 tbsp olive oil
    1 tsp. salt
    1/4 tsp. pepper
    1 cup zucchini, unpeeled & sliced
    1 cup carrots, peeled and sliced
    2 bay leaves
    1 (16 oz.) can tomatoes
    1 (8 oz.) can tomato sauce
    1/4 c. dry white wine, such as Pinot Grigio
    4 servings Whole wheat pasta


Saute whole chicken tenders with onion, olive oil, garlic, salt, and pepper in the bottom of a large pot until chicken is slightly browned but not completely cooked.

Add all remaining ingredients to large pot, cover, and cook about 30 minutes or until chicken is done. Remove bay leaves. Serve with whole wheat spaghetti.
