2 cups pumpkin puree
2 cups whole wheat flour
1 cup quick cook oats
3/4 cup sugar
2 tsp baking soda
1/2 tsp baking powder
2 tbsp pumpkin pie spice
1 tsp salt
1 cup applesauce (unsweetened)
3 eggs
Directions
1.Preheat oven to 350F (175C). Grease 12 muffin cups or line with paper muffin liners.
3.Stir together dry ingredients. In a separate bowl, beat together wet ingredients. Stir into flour mixture just until smooth. Scoop batter into prepared muffin cups.
4.Bake for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
