    1.4 lbs. stew meat (beef)
    1 T olive oil
    1 tsp Paul Prudhomme's Blackened Steak Magic seasoning
    1/2 cup red wine
    2 Jennie-O turkey sausage links
    2 boxes low sodium beef broth
    1 box vegetable stock
    1 T beef base
    1 T tomato paste
    1 large sweet onion, chopped
    3 medium carrots, chopped small
    2 medium stalks celery chopped small
    6 cloves garlic, whole
    2, 14 oz cans diced tomatoes
    1 can tomato sauce
    1 cup green beans, chopped
    1 can great northern beans, rinsed
    1, 10 oz package fresh baby spinach, chopped coarse
    1 tsp dried basil (or to taste)
    1 tsp dried oregano (or to taste)


Heat olive oil in pan. Sprinkle meat with Steak Magic. Brown stew meat. De-glaze with 1/4 cup red wine. Add Jennie-O sausage. Brown. De-glaze with 1/4 cup red wine. Transfer all ingredients to large stock pot. Add broths, beef base, and tomato paste. Add remaining ingredients except basil and oregano. Bring to a boil. Turn heat down to a simmer and cook at least 2 hours or until the meat is tender. 20 minutes before serving add basil and oregano.

Serving Size: Makes 14, 1 1/2 cup servings
