Ingredients

    1 1/2 cups buttermilk
    1 cup pumpkin puree
    1 egg
    2 tablespoons vegetable oil
    2 cups all-purpose flour
    3 tablespoons brown sugar
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon ground allspice
    1 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/2 teaspoon salt

Directions

Mix together dry ingredients in one bowl. Mix together moist ingredients in another, then combine. Cook on hot griddle (around 350 F) until done on each side.

Serving Size: makes about 14 pancakes
