Introduction

I had the Sea Monkey Grilled Fish Tacos on a recent trip to Puerto Vallarta - grilled mahi-mahi (I think?) topped with shredded cabbage slaw and served with a spicy sauce on the side - probably the best fish tacos I've ever had. Seriously, they were so good that I was inspired to create my own "copycat" recipe so I could enjoy it at home! Ingredients

    Corn Tortillas, 2 oz
    *Cheese, Farmer Cheese, Friendship No Salt Added, 1 oz
    *Tilapia, 3 oz
    *Broccoli Slaw, 2 oz
    Oikos Organic Greek Yogurt, Plain, 1.5 oz
    *Spices, Sriracha HOT Chili Sauce, Tuong Ot Sriracha, 1t
    *A Taste of Thai - Sweet Chili Sauce, .25 tbsp

Directions

Sear tilapia in a hot pan, 2 minutes each side. Squeeze juice of half a lime over fish while cooking.



In a small bowl, mix Greek Yogurt, Sriracha and Thai Chili Sauce until well-blended. Set aside.



Heat corn tortillas over medium heat until softened. Place farmer's cheese in the center of each tortilla and top with fish. Add a small handful of Broccoli Slaw and top with yogurt mixture, 1/2 per tortilla.
