Number of Servings: 12


    1/4 cup plus 3 tablespoons coconut flour
    3 eggs (you can use egg whites if you want to cut down on the cholesterol or calories - 6 egg whites)
    1/4 teaspoon vanilla
    2 tablespoons melted coconut oil or melted butter
    2 tablespoons unsweetened coconut milk (or yogurt)
    3 tablespoons honey
    1/4 teaspoon salt
    1/4 teaspoon baking powder
    1 t real vanilla extract
    1 mashed banana
    zest of half an orange
    1/2 cup frozen blueberries (or grated carrots or grated zucchini or raspberries or grated apple or leftover mashed squash, pumpkin or yam - add appropriate spices - cinnamon, alspice, that sort of thing...)
    2 T soy powder
    2 T flax seed + 1 T hemp seed, whizzed in the food processor


combine the dry
combine the wet
add together and stir to combine (no need to worry about toughening these babies - no gluten!)
Add fruit
pour into paper-lined muffin tin and bake at 350 F for 20 minutes or till golden.
Dense, moist and yummy!

Serving Size: makes 12 big or 24 small
