Ingredients

    1 cup jasmine rice
    8oz frozen stirfry vegetables
    1/2 cup frozen or fresh broccoli
    1/2 of raw onion chopped
    2 carrots, peeled and sliced thin
    2 large fresh eggs
    5 tablespoons soy sauce
    2 tablespoons coconut oil

Directions

Cook rice according to package, can use jasmine or white rice, haven't tried it with brown. Fluff rice with fork. Begin stir frying the vegetables with the coconut oil. When tender make a hole in center and scramble the eggs. When the eggs are cooked, add the rice and soy sauce and continue to stir fry a bit longer until well blended. The amount of soy sauce can be adjusted to your personal liking, this is an estimate of how much we use typically.
