    1 turkey breast
    1 onion, sliced
    2 dashes Angostrua bitters [optional]
    Juice of 1/2 lime
    2 Tbsp. marsala wine [or sherry]
    1/2 tsp. ground cinnamon
    2 turns of the peppermill
    2 bay leaves


Preheat oven to 450 degrees. Remove skin and visible fat from turkey. Lay onion slices on a large sheet of heavy-duty foil. Place turkey on top, meaty side up. Sprinkle bitters, jice, wine, cinnamon, & pepper over turkey. Lay bay leaves on top. Wrap foil around turkey and crimp the ends. Place on a cookie sheet. Bake for 20 minutes/poound. Open the foil for the last 5 min. of cooking. Remove from oven and reseal the foil, let turkey stil until serving time.
