Introduction

Makes you all warm inside and not just because it's hot! Makes you all warm inside and not just because it's hot!
Number of Servings: 2

Ingredients

    4carrots
    1 medium potato
    1onion
    Handful of fresh coriander leaf
    Olive oil cooking spray
    1 tsp ginger
    2vegetable stock cubes/1tbsp stock granules

Directions

~Dice carrots and potato.
~place stock cubes, ginger, carrots and potato in a large saucepan and add enough water to cover. Boil for 20minutes.
~Meanwhile sweat onions for 10minutes in fry spray then add to other vegetables to boil for the last 10minutes.
~Blend all ingredients in a blender or food processor with the coriander leaf.

Can be frozen or kept in the fridge and heated later. Serve with a fresh crusty roll (not included in nutrition facts)
