Introduction

A recipe I found on Allrecipes but "healthified" a little! A recipe I found on Allrecipes but "healthified" a little!
Number of Servings: 60

Ingredients

    1 1/2 cups Smart Balance Buttery Spread, Softened
    5 Cups Unbleached All-purpose flour
    2 cups white sugar
    2 tsp baking powder
    1 cup Egg Beaters (equivelent to 4 eggs)
    1 tsp salt
    1 tsp vanilla extract

Directions

1) In a large bowl, cream together Smart Balance spread and sugar until smooth. Beat in Egg Beaters and vanilla. Stir in flour, baking powder, and salt. Cover and chill dough for at least 1 hour (or overnight).

2) Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheet.

3) Bake 6-8 minutes in preheated oven. Cool completely.

This will make approximately 60 cookies depending on thickness of dough and size of cookies. Nutrition is based on 60 cookie yield.
