Introduction

This recipe is great with sour cream and salsa, plus a tossed salad. This recipe is great with sour cream and salsa, plus a tossed salad.

Ingredients

    20 oz Turkey breast meat, chopped
    1 cup Onions, raw, chopped
    34 oz Tillamook Medium Cheddar Cheese, shredded
    2 20 oz cans Enchilada Sauce, Rosarita
    10 Mission Flour Tortillas, Soft Taco, 8 inch

Directions

Pour enchilada sauce into shallow bowl. Dunk flour shell into sauce and place on plate. Put 2 oz turkey meat, 3/4 oz onion, and 2 oz shredded cheese on shell and roll. Place in pan until all ten are done. Place remaining enchilada sauce over rolled enchiladas. Place in 350 degree oven and bake 45 minutes or until bubbling. Place remaining cheese over top and melt, allowing cheese to brown slightly. Remove from oven and serve.

Serving Size: Makes 10 enchiladas
