Ingredients

3 bananas
2 eggs
1 tsp. vanilla
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 cup buckwheat flour, plus more if necessary
1/4 cup chocolate chips
1/4 cup walnuts
Directions
1. Combine bananas, eggs, vanilla and spices.
2. Sift baking soda, powder and 1 cup of flour.
3. Stir dry ingredients into wet ingredients.
4. Add additional flour if needed to make it fairly thick.
5. Fold in chips and walnuts.
6. Divide evenly into 12 muffin tins.
7. Bake @ 350 for 15 - 20 minutes or until golden brown, or
to your liking.
