    1/2 cup Italian Panko Crumbs
    1 large Egg, slightly beaten
    2 tbsp Olive Oil
    1/2 cup Onions, finely chopped
    2 stalks Celery, finely chopped
    1/2 cup Carrots, finely chopped
    1lb lean Ground beef (or ground turkey)
    1/2 cup Parmesan Cheese, grated
    1/4 cup Ketchup
    1 tsp Salt
    1/2 tsp black Pepper
    1/4 cup Ketchep (for the top)


Preheat the oven to 350F. Coat pan or tin with cooking spray
In a large skillet sweat the onions in the olive oil about 7 minutes then add the celery and carrots and cook 3 minutes.
In a large bowl combine the panko, egg, onion mixture, ground beef, cheese, 1/4 cup ketchup, salt, and pepper.
Stir to combine well.
Either turn the mixture into a loaf pan or divide into large "meat balls" top with the remaining 1/4 cup ketchup.
Bake until the center of the meatloaf is no longer pink usually about 45 minutes.
