Very easy, yummy soup. Very easy, yummy soup.
Number of Servings: 12


    Cauliflower, 1 head, chopped
    Broccoli, 3 cups, chopped
    Onion, small, chopped
    Carrot, med, shredded
    Chicken bouillon cube, 4
    Enough water to cover veggies
    Butter, 4 T.
    Flour, 1 C.
    Milk, 2%, 3 C.
    Cheddar cheese, grated, 1 C.
    Velveeta cheese, 2%, 4 oz.


Place first six ingredients in crockpot, and cook 4 hours on high, or 6 hours on low, or until vegs are soft.
In separate pan, melt 4 T. butter. Stir in 1 C. flour. Add 3 c. milk, heat on medium, stirring until thick. Add immediately to crockpot, and use potato masher to blend, and to bring veggies in soup to whatever consistency you prefer. You may vary the percentages of the veggies, for example, using all broccoli, or all cauliflower, etc. To lower calories, you can skip the butter by blending the flour into cold skimmed milk, then cooking til thick, and using low-fat cheddar.
