    1/3 Cups uncooked couscous
    1.5 Cups Chopped Cooked chicken Breast
    1 Cup Chopped cucumber
    1 cup halved grape tomatoes
    1 cup chopped fresh parsley
    1/4 Cup chopped fresh mint
    4 green onions, chopped
    1 garlic clove, minced
    1/4 Cup fresh lemon juice
    2 TBSP olive oil
    1/4 tsp salt


Prepare couscous according to pckg directions, omitting salt and fat. Fluff with a fork.
Combine couscous, chicken and next 6 ingredients in a large bowl. Set aside.
Combine lemon juice, olive oil and salt in a small bowl; stir well with a whisk. Pour dressing over couscous mixture.

Sprinkle with feta cheese for extra flavor! (But you'll have to track it separately!)
