    2 slices bacon, finely chopped
    3 chicken thighs, bone and skin removed
    4 T. White balsamic vinegar, divided
    3/4 tsp pepper, divided
    1/2 tsp salt, divided
    8 oz. canned sliced mushrooms, drained and rinsed
    1 T dried Rosemary


1. Heat large nonstick skillet over medium High heat. Add bacon, cook until crisp, remove from pan and drain on paper towels. Reserve drippings in pan.
2. Brush chicken with 2 T. Vinegar and sprinkle with 1/2 tsp pepper and 1/8 tsp salt. Add chicken to drippings in pan, cook until desired degree of doneness. Remove chicken and keep warm.
3. Add mushrooms and rosemary to pan. Cook, stiring frequently, 3 minutes. Stir in water, remaining 2 T vinegar, and remaining salt and pepper. Cook 6 minutes or until mushrooms are tender, stirring occasionally. Stir in bacon. Spoon Mushroom mixture over chicken.
