Ingredients

    250g chorizo, sliced
    1 red onion, chopped
    2 sticks celery, chopped
    1 red pepper, sliced
    2 cloves garlic, chopped
    150ml dry white wine
    400g tin tomatoes
    410g tin cannellini beans (or chickpeas)
    Parsley to garnish

Directions

Fry the chorizo in a large pan
Add the onion, celery, pepper and garlic and cook until softened
Stir in the wine and tomatoes, season and simmer for 15 mins
Add the beans and simmer for 5 mins
Sprinkle with parsley and serve
