    -2 1/4 cups white whole wheat flour
    -1/3 cup raw millet
    -1 tsp. aluminum-free baking powder
    -1 tsp. baking soda
    -1/2 tsp. salt
    -1 cup plain yogurt
    -2 large eggs
    -1/2 cup barely melted butter
    -1/2 cup honey
    -2 Tbsp. lemon juice
    -zest from one lemon


-Preheat oven to 400 F.
-Spray a 12-cup muffin pan with baking spray, or butter, or use paper liners.
-Mix dry ingredients in one large bowl.
-Mix wet ingredients in a medium bowl.
-Add wet ingredients to dry ingredients.
-Fill muffin cups to just below the rim.
-Bake for 15 minutes in top 1/3 of the oven until tops are slightly browned and cracked.
-Let cool in pan for 5 minutes.
-Turn out onto wire rack to cool.

Serving Size: Makes 12 muffins
