Introduction

You will never miss all the fat and oil or the flavor from regular stroganoff. This is quick and easy and low calorie and low fat and oh so good for you. It tastes just as good (or better in my opinion) and you are using lots of healthy ingredients. You will never miss all the fat and oil or the flavor from regular stroganoff. Ingredients

    1 lb Beef cut into small cubes
    1 TBS flour - Salt , Pepper and garlic powder to taste
    1 TBS Oil (I use Olive Oil)
    1 Onion chopped
    1.5 lbs fresh mushrooms sliced
    1 can beef broth
    3/4 cup fat free sour cream
    1 large Zucchini

Directions

Mix the beef with the flour and seasonings (I put it in a plastic bag and shake to get a good even coating)
Heat the TBS of oil in a large pan
Add the beef and brown well
Add Onion & Mushrooms and stir for a minute or so and then add broth - Let this cook for about 20 minutes, the meat will get tender and the veges will shrink down
Add Sour Cream Stir and add Zucchini
Give it about 10 minutes or so for the Zucchini to cook thru and serve.

This is great all by itself and also over noodles or rice.

Sometimes I add about 1/4 tsp of red pepper flakes just to give it a little kick.

This is just as good the next day too.
