    1 lb. ground turkey (lean)
    1/2 baked potato
    3 carrots
    1 onion
    1 package frozen spinach
    2 bell peppers
    2 c. part-skim mozzarella cheese
    2 eggs
    1 c. soy milk


makes 6 servings

chop vegetables
saute veggies in a large saucepan (starting with onions, then adding peppers, carrots, and then defrosted and drained spinach, as well as diced potato)
once soft, add turkey
good until turkey is fully cooked
pour meat and veggie mixture into a large casserole dish
cover with shredded cheese
pour mixtured of beaten eggs and milk over the casserole
place in 350 degree oven for 30 minutes, or until cheese is bubbly

serve with brown rice or whole wheat bread.
