Introduction

Light Tuna Casserole that is tasty and creamy Light Tuna Casserole that is tasty and creamy
Number of Servings: 8

Ingredients

    3 cans chunk Tuna
    8 oz Egg Noodles, cooked al-dente
    1/2 cup chopped onions
    1 can mushroom pieces
    1 Tbsp Butter
    1/4 cup flour
    2 cups chicken broth
    2 cups 1% milk
    1 cup frozen peas
    salt & pepper to tast
    a pinch of dried thyme leaves (or fresh if available)
    1/2 cup of shredded light chedder cheese

Directions

Preheat oven to 350 Deg. Coat a non stick pan with cooking spray, melt butter and cook onions until they are translusent, add mushrooms and cook for a bit longer. Stir in 1 Tbsp of the flour, cook for a minute while stiring then wisk/stir in chicken broth. Bring to a boil. Whisk remaining flour into 1/2 cup of the milk and add to bubbling sauce, stiring constantly while it thickens and slowly adding remainder of milk.
Once sauce is thick, turn heat to very low. Add Tuna and peas, season with salt and pepper. Mix in Noodles and pour everything into a spayed casserole dish. Bake, covered for about 20 minutes, uncover, sprinkle with cheese and bake until cheese is melted.

Serving Size: Cut into 8 servings
